topped with a crown of crispy shoestring potato fries

 

 

CUBAN ROPA VIEJA

Braised Shredded Brisket and Vegetables in a Savory Tomato Base

Over Morros y Cristianos with a Plantain Accent

 

One of the national dishes of Cuba,

this hearty beef stew is slow-cooked with

a medley of herbs, vegetables and a dash of wine,

served over black beans and white rice.

FIRE-ROASTED MOJO CHICKEN DRUMSTICK WRAPPED IN BACON

or CUBAN LECHON

Served with

Cuban Green Salad of Shredded Lettuce, Diced Tomatoes,

Pickled Red Onion, Black Beans & Grilled Corn

Finished with a White Balsamic Vinaigrette

 

No Cuban feast is replete without Lechon, pork slow-roasted with garlic and herbs.

The heart of island cuisine is mojo, a marinade and finishing sauce made of

sour oranges and Chef’s favorite spices.
